But it'll certainly keep me in pancetta for a year or so -- I had to crank up the swamp cooler down there last night to up the humidity -- it was drying out too fast (plus there was water in the swamp cooler I had to use up). I wrote another letter to the editor on the Ameya thing -- it should be in tonight's paper ... they just piss me off ... It’s not that big — five pounds — about the size of a pork roast I guess? As I pointed out to the tour-guide who was boasting about the "creative community" they were planning to build there, "We already have a town."
