		<description>[...] It wasn&#8217;t all sweets around here either. I made a gorgeous version of the Pate Grandmere from Michael Ruhlman&#8217;s Charcuterie book &#8212; instead of pork liver I used half the liver from my antelope &#8212; unlike the horrifying moose liver, antelope liver is lovely. Antelope liver is not mushy, it&#8217;s just tidy and has the loveliest texture. I thought the Pate Grandmere would be good because it&#8217;s a very livery terrine &#8212; you sear the liver before grinding it, and while I don&#8217;t like slices of liver as much as the MH does, I think it&#8217;s going to make for a lovely terrine. And it didn&#8217;t break &#8212; I don&#8217;t have a fancy pate mold but I have to say, my old Pyex bread pan works really well, and it&#8217;s the perfect size to use a foil-wrapped brick as a weight. So the terrine will get cut into slices, packed with my vaccuum sealer, frozen and shipped along with the moose pate and some buffalo summer sausage I bought from a local butcher for the game portion of Christmas. The MH has been guiding for most of his adult life  -- and he totally set the shot up for me -- I just pulled the trigger and tried not to get a black eye from the scope. And like I said, I didn&#039;t even gut it myself, I stood there holding one leg and looking on ... so I&#039;m hardly a &quot;real&quot; hunter ... But I do love me some antelope and now I have a lot of it in the freezer. But I am kind of proud of myself for not wimping out.</description>

		<description>Wow! You make it sound so... simple. I&#039;ve been hunting for 2 years now and am still looking to take my first big game! That&#039;s how the cookie crumbles, I guess. No one in my family hunted and my husband started hunting at the same time as me, so the whole experience has been a revelation to me. In fact, I think it was very much part of the change in my outlook on food (I was a grocery store, meat-on-sanitary-pads person before). 

With respect to field dressing, deer occurred to me as antelope did to you (oooh! parts!). But the stomach in the antelope freaked me out! It was HUGE! Also, if you think it didn&#039;t smell bad you must not have accidentally poked a pinhole in the stomach. Good God! 

Anyhow, I&#039;ve been enjoying your blog very much! I live over in Helena, so it&#039;s good to hear about other Montanans living how we&#039;re striving to!</description>

		<description>I just found your blog and I really enjoy it.  I&#039;m actually from that area so it&#039;s interesting to see it through someone else&#039;s eyes.

I totally relate to your antelope experience.  I&#039;ve never had to gut one but I&#039;ve gutted many (oh so many) chickens.  It really is weirdly interesting to see just how delicate lung tissue is.  And their digestive system is amazing.</description>

This is the antelope&#039;s head and skin - sort of artfully arranged in the pile of dead leaves out side the MH&#039;s garage, don&#039;t you think? I don&#039;t think the skin can be used for anything really -- I guess if we were really dedicated perhaps we could tan it and use the leather -- but the hair falls off so badly if that it&#039;s not worth bringing it in. I should ask the MH if maybe he&#039;ll do the skull for me though -- that might be kind of fun on my wall -- he&#039;s done a bunch of them -- although it&#039;s such an icky process that I hate to ask ...</description>

Yes, everyone should be prepared to kill the animal whose meat they want to eat although I have only just managed to boil a lobster. I&#039;m not squeamish, I just worry that I won&#039;t do it properly and the animal will suffer unnecessarily
Can the antelope skin be used for anything?
I have a reindeer skin that sheds constantly and is a pain but it&#039;s so beautiful...</description>
