		<description>I started a batch of sauerkraut from the same book a few weeks ago. I used the glass jar recipe since I too did not have a crock large enough. We just tried a bit with dinner a couple nights ago and it was very tasty. I went with simple spices, caraway and bay leaves. It really only took about two weeks before it started smelling (and tasting) really krauty. Enjoy!</description>
