The first time I cooked a ham and bean soup — using the ham remains from Christmas dinner + dried beans + water, basically — I felt like I’d performed a miracle. I just found it so amazing that leftovers mixed with dried beans could, with a day of simmering, transform into something so delicious.
I’ll have to try Julia’s leek & potato soup. I make that kind of soup all the time, but I use boxed vegetable broth and (it’s true!) bacon slices. I’m dubious that water alone will make a tasty soup — but I’ll try it!
I was dubious too — it’s good though! I have to admit, I like to add some carrot, and sometimes some ham … but it’s one of those basic soups that you can play with forever …
