The first time I cooked a ham and bean soup -- using the ham remains from Christmas dinner + dried beans + water, basically -- I felt like I'd performed a miracle. I just found it so amazing that leftovers mixed with dried beans could, with a day of simmering, transform into something so delicious.

I'll have to try Julia's leek & potato soup. I make that kind of soup all the time, but I use boxed vegetable broth and (it's true!) bacon slices. I'm dubious that water alone will make a tasty soup -- but I'll try it!
